The Art of Steak: Perfect Cuts for a Perfect Evening

Choose from our delectable steak range with options including Monte, O’Connor, Wagyu, and the premium AGED Southern range. Our steaks come in various cuts, so you can select either a rump, rib eye, fillet, or New Yorker.

The Monte range stems from the oldest breed registry in the world, Thousand Guineas, which has been supplying Australia with shorthorn beef since 1825. Monte steak is exclusively sourced from Thousand Guineas paddocks that undergo an advanced monitoring programme to make sure that the steak that lands on your plate has been well taken care of. This is the basis of our introductory steak range.

The O’Connor range hails from the prized paddocks of Gippsland pastures where Angus and Hereford cattle are raised. The combination of nutrient-rich soil, pure water, and no added hormones or antibiotics gives this meat its consistently high quality. O’Connor steaks are dry-aged for four weeks, enhancing the flavour and tenderness for a mouth-watering steak.

Wagyu beef, the national treasure of Japan, is highly regarded as some of the best beef in the world. Wagyu cows are known for their tenderness and potent, delicious flavour – a result of the well-documented care they receive from Japanese farmers. Wagyu cows are fed a strict gourmet diet of grains and are massaged to avoid tense muscles which can toughen their meat.

The AGED Program’s Southern Ranges come from Gippsland cattle flawlessly bred on green pastures by the Australian Meat Group. The flavoursome steak that ends up on your plate is due to our in-house ageing technique. The results speak for themselves.

Wine Selections to Complement Your Meal

We’re called The Meat & Wine Co. for a reason. Our wine lists are carefully selected by qualified and experienced sommeliers who are dedicated to providing diners with a fully immersive pairing experience.

Our encyclopaedic wine list encompasses red, white, sparkling, and dessert wines from around the globe. To get the most out of your meal, pair your meat with a wine that complements it by bringing out the flavour profiles of both.

A leaner red meat should be met with a lighter red wine. On the contrary, a richer cut should be paired with a bold red. Let’s start with steaks.

A steak generally pairs with a full-bodied Cabernet Sauvignon. But, depending on the steak, you may want a red with finer tannins. A rump eye will pair well with a Pinot Noir or a Malbec, as will a lamb dish. Rib eyes are made for Shiraz wines as they balance out the marbled fat.

Pork ribs are complemented by lighter juicy, fruit-forward Pinot Noirs, or even a German Riesling if you prefer a white.

If you need help selecting a wine variety, our lovely staff can recommend the perfect wine to pair with your dinner.
